History: August is Peak Garden Tomato Time in much of the United States, so don't Waste Them!
Description: Fresh Tomato Relish is Perfect for
Bruschetta, Italian Toast Slices Rubbed with Garlic and Olive Oil
Serving size: 4
Preparation time: about 15 minutes

Amount/Measure/Ingredient:
4 tbsp. olive oil, extra-virgin
1/4 cup Italian parsley, freshly chopped
1/2 cup red onion, minced
1 lb. fresh tomatoes, liquid centers removed, then chopped
1 long green chile pepper, cored, seeded and chopped (1/4 cup after chopping)
2-4 dashes of cayenne pepper, more or less as you like
2 tbsp. tomato paste
2 tsp. sugar
2 tbsp. red wine vinegar
1 tsp. salt

Preparation:
Combine all the ingredients and mix well. Chill for 1 hour then serve a s a dip or relish to accompany thick crusty slices of fresh homemade garlic bread or
Bruschetta, Italian toast slices rubbed with garlic and olive oil.
This recipe doesn't have garlic because you will be using it to top garlic bread and you want to taste the ingredients.
