Amount/Measure/Ingredient:
7 ounces Scallops, de-bearded, washed and dried
1 tsp shallots, finely chopped
1/4 tsp fresh thyme, finely chopped
1 ounce olive oil
1 ounce butter, melted
1 pinch salt
2-3 grinds black peppercorns
1 ounce white wine, chardonnay
1 tbsp. parsley, chopped
1 piece lemon wedge
Preparation:
Place the scallops in a ceramic table ready shallow baking dish, sprinkle with shallots, thyme, drizzle with olive oil, butter, wine and pinch of salt. Place in a 500+ degree F. oven for 4-5 minutes. Note: you may also broil the scallops if you prefer, either way they will be delicious!
Remove and sprinkle with parsley.
Serve in the casserole dish with a wedge of lemon.
