Cornmeal Waffles

Amount/Measure/Ingredient:

2 cups flour
2 tablespoons cornstarch
1/2 cup cornmeal, sprinkled over and stirred into 1 cup boiling water
6 teaspoons baking powder
1 teaspoon salt
3 tablespoons sugar
4 eggs, large, separated
1 1/2 cups milk
1/2 cup melted butter

Preparation:

Sift dry ingredients. Beat the egg whites to soft peaks. Beat egg yolks, add milk, butter and combine with the dry ingredients, mix well. Gently fold in the beaten egg whites, mixing thoroughly.

Bake in a hot waffle iron that has been sprayed with a pan coating such as Pam. Follow your waffle irons cooking time suggestions.
