Description: An appetizer perfect for parties!!
History: One day I needed to make an appetizer for a dinner party and I started looking for a recipe and I just made it up and it tasted good , so I brought it to the party, it was a complete success! Now everyone knows me better for the appetizer than from my own name! The recipe comes from Puerto Rico.

1 lb. boiled until tender codfish
1 onion, chopped in small cubes
1 green bell pepper, chopped in small cubes
1 sweet red pimiento, chopped in small cubes
4 hard boiled eggs, chopped in small pieces
4 soda crackers in crumbs
1 small box of raisins
15 chopped almonds in small pieces
1 small can of early peas
1/4 cup of apple vinegar
3/4 cup olive oil
1 small can tomato juice
Mix all the ingredients with a wooded or plastic spoon. Put it an a crystal jar with lid. Put the jar in the refrigerator for an hour or less. Serve with unsalted crackers. You can prepare it days before usage.
