Description: Native food of northern Luzon, Philippines
History: This is a native recipe from the people of Ilokos Province. This is commonly found sold in native canteens.

Amount/Measure/Ingredient
1 kilo pork spare ribs, cut lengthwise
2 tablespoons fresh whole garlic, minced
2 tablespoons of soy sauce
1 medium sized lemon
1/2 teaspoon ground pepper
1 pig brain
1 medium sized lemon
1/2 cup chopped red onion
1 tablespoon fresh garlic, minced
1/2 teaspoon ground pepper
1 small hot chili pepper, minced
Instructions:
Mix 2 tablespoons of the minced garlic with 2 Tbsp. of soy sauce. Squeeze the lemon to the soy sauce mixture. Add 1/2 teaspoon ground pepper, mix thoroughly. Add the pork to the marinade and marinate for about 1/2 to 1 hour. Remove pork from marinade. Grill the pork ribs for about 15 minutes, or until juices are clear, baste pork with remaining marinade while grilling.
Put the brain on a tinfoil, grill the pork brain for 5 minutes.
Cut the pork ribs to bite size pieces (1/2 inch long), mix the brain with the pork ribs, add 1 tablespoon of fresh garlic to the ribs. Squeeze the other lemon on to the ribs. Add in the 1/2 cup chopped red onions. Add in the chili pepper. Mix well until the brain is mashed and it has coated the ribs. Adjust salt, pepper, and chili pepper to taste.
Serve with beer, or have it with boiled rice.
