Description: Lean pork chops, fresh mushroom in a beer glaze
History: As a college student I have had to get creative on a tight budget if I'd like to eat well. I created this recipe the day after a little get together at my apartment. Everyone I have made it for since has raved about it, and it is now a staple with my roomies and I!
I'd love to hear feedback from those who use my recipe. Most tend to recoil in horror when I describe it to them. If even one person out there likes it I would be THRILLED!
Amount/Measure/Ingredient
2 lean, thick cut pork chops
10 to 15 (or more if you like!) fresh mushrooms, cut into slices @ 1/4 inch thick
1 teaspoon garlic salt
1 tablespoon parsley
1 bottle of Pete's Wicked Winter Brew (or equivalent rich amber ale, Guinness is great too!)
Instructions:
Heat a large frying pan on medium to high heat. Once hot, sear each side of each pork chop to seal in the juiciness. Lightly sprinkle on some garlic salt and parsley. The beer keeps the chops juicy so pour it on 1 to 2 ounces at a time, pouring more when most of the beer has boiled off. After one to two minutes dump chopped mushrooms into the mix. Continue to sprinkle on garlic salt and parsley while cooking, stirring often so the mushrooms don't burn. Cook chops and mushrooms until entire beer has been used, or ingredients are fully cooked, ie., browned around the edges. (Be aware that the amount of garlic salt is a recommendation, use less or more to taste.) The sugar content of the beer will leave your chops and 'shrooms in a sauce that looks rather like a glaze. Serve with white rice or salad. Cooking time, 8-10 minutes. Enjoy! '
