Description: My wife is a vegetarian, so I have to come with interesting dishes without meat.

Preparation Time: about 30 minutes

Amount/Measure/Ingredient
1 large bunch - spinach
3/4 cup almonds
1 cup Monterey Jack cheese (grated)
1/4 cup chopped onions
4 Tsp. cream cheese / chives spread
4 large flour tortillas
Butter flavored cooking spray
Instructions:
Cook spinach in large pot until wilted, then finely chop. Mix spinach, almonds, and copped onions together. Spread cream cheese onto the "in-side" of the 4 tortillas. Add spinach mixture to covered tortillas and put together "sandwich style." In skillet, cook both sides of quesadillas, until brown (or until cheese melts). Use cooking spray to avoid sticking. Remove and cut into 4 pieces. Serve with sour cream and pico de gallo.
