Recipe Name: Fennel, Chickpea and Prawn
2 tbsp Olive Oil
1/2 Fennel, finely sliced
4 Cloves Garlic, peeled and finely sliced
1 tsp Paprika
1 400g tin Chopped Tomatoes
1 220g tin Chickpeas, drained and rinsed
1 handful Kale, washed
150g raw peeled Prawns
Salt and Pepper for seasoning
Quick and Easy dish
Heat 1 tbsp olive oil in a frying pan over a moderate heat and add the fennel. Cook for about 5 minutes, until softened. Add the garlic and the paprika and fry for 1 minute. Add the chopped tomatoes and increase the heat. Cook for 5 minutes, until thickened. Stir in the chopped greens, chickpeas, a splash of water if needed and season. Cook for 2 minutes and add the prawns. Cook until the prawns are pink and serve.
