Recipe Name: Broccoli Lemon Chicken with Cashews
1 tbsp Groundnut Oil or Sunflower Oil
340g Mini Chicken Breast Fillets (chicken goujons)
2 Cloves Garlic, peeled and sliced
200g Young Broccoli Stems
200ml Chicken Stock
1 heaped tsp Corn flour
1 tbsp Honey
Zest of half a Lemon
Juice of a whole Lemon
1 Handful Roasted Cashews
Heat the oil in a large wok. Add the chicken and cook fry for 3 to 4 minutes until golden. Remove from the pan and add the broccoli and the garlic. Stir for 1 minute and then cover and cook until tender. Mix the stock, corn flour and honey together and pour into the pan. Stir until thickened. Add the chicken back to the pan and allow to heat through. Add the lemon juice, lemon zest and cashews. Stir till hot and serve with rice or noodles.
