Description: Cheesecake History: Well, cheesecake is originally a Roman invention Servings: 12-16 Amount/Measure/Ingredient BASE: 1.5 cups finely crushed chocolate biscuits (cookies) 100g butter, melted FILLING: 500g cream cheese .5 - .75 cup castor sugar 4 eggs .5 cup cream .5 cup sour cream .25 cup lemon juice 100g white chocolate, melted .75 cup berries (blueberries, blackberries, raspberries or a mixture of all) GLAZE: 200g dark (semi-sweet) chocolate .5 cup cream |

Instructions:
Base: Mix crumbs and butter. Press into base of 23cm spring form pan. Refrigerate while preparing filling. Filling: Beat cream cheese and sugar till light as possible. Add eggs, one at a time. Add all other ingredients, gradually. Pour half the mixture into tin with base in it. Sprinkle the berries over the mixture. Pour remaining mixture over Bake in moderate oven (180 deg C.) for approx 1-1.5 hours or till just firm in centre. Cool in oven with door ajar. Glaze: Put chocolate and cream together in glass bowl or saucepan and microwave or melt over hot water till melted together and dark and glossy. Pour glaze over cheesecake when cheesecake is cooled. (you may need to heat glaze slightly as it will thicken on standing) Serve with King Island Cream (if you're in Australia!) and extra berries.
