Recipe Name: Walnut Cheese Ball or Dip
Description: Fantastic to serve with pre-dinner drinks
History: Irish, my own invention
Serving Size: 6/8
Preparation time: about 20 minutes + 8 hours in the fridge
8 oz. cream cheese, Philadelphia
1 1/2 teaspoons of celery salt
1 tablespoon of chopped parsley
1 tablespoon of grated onion
1 tablespoon of chopped green pepper
4 oz. drained canned pineapple chopped
4 oz. walnuts chopped
To serve: lettuce leaves, cocktail crackers/biscuits, celery sticks/crisps, carrots.
Beat the cream cheese until soft then gradually stir in the salt, parsley, onion, green pepper, crushed pineapple. Finally add half the nuts and combine well. Sprinkle the remaining nuts on a sheet of foil. Chill the cheese mixture in the fridge until firm. Shape the chilled mixture into a ball and roll in the nuts to coat. If you want to serve as a dip, do not roll in nuts, just serve in a bowl with carrots, celery sticks/crisps and Ritz crackers/biscuits.
