Ingredients:
History: This is a true Tex-Mex dish, modified for a palate that likes it hot! Serving Size: 25 Preparation Time: about 30 minutes Amount/Measure/Ingredient 2 lb Velveeta cheese, diced 1 lb Hamburger meat 2 cans Rotel diced chilies and tomatoes 1 cup chopped onion 1 TBS ground cumin 2-6 jalapenos, seeded and chopped fine 1 TBS Chili powder 1 tsp salt 1 tsp ground black pepper 1 cup chopped fresh cilantro (coriander) 2 Large bags of corn tortilla chips |

Instructions:
Brown the ground beef with the onion, salt & pepper. Place the diced cheese in a double boiler, on medium heat. Add to the cheese: cumin, chili powder, diced jalapeno, cilantro & browned ground beef. Heat and stir until thoroughly mixed. Serve warm with corn tortilla chips. I usually use about 6 jalapenos because I like it hot!! Add or delete jalapenos according to your taste. Enjoy!!
