Recipe Name: Microwave Spaghetti Sauce
History: As my father came from Sicily, I was raised on spaghetti. I wanted to be able to make a sauce that was easily prepared and would taste as good as the traditional stove-cooked sauce.

1 large onion, diced
2 teaspoons olive oil
1-2 cloves of garlic, crushed
2 x 400 gram (14 ounce) cans diced tomatoes in tomato juice
2 teaspoons dried basil or Italian herb blend
1/2 teaspoon salt
1 teaspoon sugar


This recipe uses a 750 watt microwave.

1. Place the onion in a microwave jug - 1500 ml capacity, with olive oil. Microwave on HIGH (1000) for 4 minutes. Stir onion and microwave for a further 3-4 minutes until they are clear and starting to brown.
2. Add the remaining ingredients. Stir well and microwave for 20 minutes on MEDIUM (500)
3. Stir the mixture and return to microwave for another 20 minutes on MEDIUM.

I find it works well if you boil the water for the pasta at step (3). The pasta is usually cooked when the sauce is done.
You can also add meat/meat substitutes to this recipe - it's really up to your imagination.
Choose Italian style canned tomatoes. You can also use fresh tomatoes if you prefer - Roma tomatoes work well.
