Rajeev Kumar Bansal 
former Executive Chef Taj Coral Reef Resort, North Male' Atoll, Republic of Maldives is now working in Mumbai, India.

Studied Hotel Management at the premier most institute in India- The Institute of Hotel Management and Catering Technology at Mumbai. Subsequently joined Taj group of Hotels as a Management trainee in 1989 and grew with the organization, formerly Executive Chef at Taj Coral Reef Resort at the Maldives. During the tenure with Taj Hotels I have worked extensively in various properties in India and Nepal. I have further been accredited for Hotel Management Studies by the Business Management Association, London, Ecole Hoteliere de Lausanne for Effective Kitchen Management studies and Bachelor of Arts from Delhi University. 

With a keen intrigue towards kitchen right from my childhood, I soon found myself learning kitchen chores and what it took to whip up a homely meal or two.

My focus is always on understanding the character of the cuisine (Be it Chinese, Continental, Italian, Indian, Maldivian or any other cuisine) and especially the usage and combination of ingredients & thereafter presenting the food in the most appropriate and ethnic way. In order to understand Mediterranean food, I spent two years learning Italian language and culture at the Italian Cultural Centre, New Delhi. 
 
With firm affiliation towards culinary norms, have a strong penchant for systems approach in food production from quality and training point of view. I specialize in food safety and hygiene related controls above all safe and GOOD COOKING.
 
My idea of a good Chef is a skilled and creative personality with a good knowledge and understanding of human psychology apart from various other necessary requirements.
 
During the current assignment at Maldives- am closely working at Maldivian food, which I find to be very interesting.
I love to bring out the robust character of the cuisine and am very adventurous and keen to innovate and delight the palate. 
 
In my free time I would love to be by a nice quiet place listening to some soft flute and at times playing it myself too. At times dabble in poetry, tennis would be another intriguing hobby but it takes two to tango…..
